Cheese crackers and champagne!

To match the current Advent season, we present a recipe for cheese biscuits, to enjoy with a glass of champagne!

For 70 pieces

For the dough
100 grams butter, softened
100 grams cream 1 medium egg
100 grams grated cheese (Emmental, Gouda,...)
250 grams wheat flour 1 teaspoon baking powder
1 1/2 teaspoons salt

For brushing
1 medium egg yolk, whisked
Spices & seeds e.g. paprika powder, caraway, poppy seeds, sesame

Preparation
25 minutes / 12 minutes baking time (+ 1 hour chilling time)

Beat the soft butter until creamy, then stir in the egg and cream. Add the grated cheese, flour, baking powder and salt and process everything into a rather sticky dough. Season with a little pepper, paprika powder or similar to taste.
Chill the dough for at least 1 hour. Roll out the dough on a lightly floured surface or, even better, between foil, rather thickly and cut out biscuits.
Preheat the oven to 180 degrees top and bottom heat.
Place the biscuits on a baking sheet lined with parchment paper and brush with the whisked egg yolk. Sprinkle with poppy seeds, sesame seeds or similar and bake for approx. 12 minutes until the biscuits are golden yellow.
