Champagne and fish
Which champagne goes with fish? The right choice depends on the preparation:
Grilled or baked fish with herbs, olive oil, or mayonnaise: A light, fruity Blanc de Blancs (100% Chardonnay) is the ideal choice – as it is with caviar, oysters, and seafood platters.
Fish with butter, cream, or rich sauces, as well as scallops, lobster, and langoustine: A more mature, rounder Chardonnay or vintage champagne harmonizes perfectly.
Caution: Pickled herring, herring, and strongly smoked fish do not pair well with champagne.
