Which Champagne pairs with dessert?
Basic rule: The dessert should not be sweeter than the Champagne – otherwise it will overpower it.
Summer berries plain or with a little cream (strawberries, raspberries, currants, blackberries, wild berries): a fresh, light Champagne or Rosé.
Fruit desserts (red fruit crumble, strawberry tart, peach soup, sabayon): Rosé Champagne.
Vanilla & Nougat: a rich Rosé such as a Rosée de Saignée.
Exception: A Demi-Sec or Sec Champagne, thanks to its own level of sweetness, also pairs well with richer sweet desserts – from cakes to chocolate mousse.
