Champagne Piollot
The Champagne estate Piollot is located in Polisot (Aube) in the southern part of the Champagne region and has 8.5 hectares of vines, which have been cultivated since 2014 using a controlled biodynamic method. The grape varieties consist of 62% Pinot Noir, 20% Chardonnay, 11% Pinot Blanc, 6% Pinot Meunier, 1% Arbanne.
Roland Piollot, a 5th generation winemaker, produces a total of 122,000 bottles per year. Piollot products are in high demand, especially in Japan and Italy, where a large part of the annual production is exported. Only very limited quantities are available for other markets.
Strict massal selection, a vine selection process, is practiced. Only 100% natural and homemade fertilizers are used. The soils are regularly plowed with respect for the biological development of the plant throughout the year. The Champagnes are aged in oak barrels and inoculated with their own yeasts.
