Delphine and her father are at the helm of this 13-hectare estate 50 km southeast of Troyes, where only Pinot Noir and Chardonnay are cultivated.
Louise Brison was my great-grandmother and Brison is our mother's maiden name. We produce only vintage champagnes, a true snapshot of the passage of time. Our wines are vinified in oak barrels and aged for a minimum of 6 years. Our Chardonnay and Pinot Noir musts are vinified and aged in small oak barrels from the Vosges, allowing them to benefit from the micro-oxygenation typical of wood vinification. Fermentation in wood enables us to preserve the natural acidity of our grapes. This period enriches the wine with toasted notes and emphasizes its aromatic complexity and aging potential.

Delphine Brulez tells: "Since I was a teenager, I had only one goal: to become an oenologist! I think it was more about being more like my father.... but the bug quickly convinced me. After a DEUG in Biology, I completed my oenology studies in Dijon. This training gave me the ability to understand what was going on in wines. But to do our job, it is important to understand the vine. At 22, I went to Bordeaux to join Bordeaux SupAgro. A change of perspective, travels, encounters with enthusiasts, all of this made it possible to build my first professional life. After graduating, I returned to the family business in 2006, where I work with my father, Francis Brulez.

"My vision: Working with nature requires a lot of thought, questioning, and perseverance. The years follow one another but are not alike, which forces us to adapt. It is essential to accept that not everything can be understood or controlled and that observation and intuition build our competence as winemakers. Being a woman in the wine trade should no longer be an obstacle; it's about passion, feeling, and in my case, respect for family tradition. 

My philosophy: Life is too short to spend it regretting everything you didn't have the courage to try! Delphine is one of the Fa'bulleuses de Champagne!
