Champagne of the Renaissance
The winery was founded in 1974 by Nelly Dhondt in her home village of Oger. Previously, the family exclusively supplied their grapes to traders. It covers approximately 8 hectares in the heart of the Côte des Blancs in Oger, Avize, Le Mesnil-sur-Oger, and Chouilly, where the main variety Chardonnay Grand Cru is produced, as well as in Ay, where the Pinot Noir Grand Cru grape varieties are cultivated.
In 1985, the Cuvée Fleuron was created, recognizable by its beautiful enameled ornament. From 1990, the Millésimes were produced.
In 2007, her son Michel joined. He brought new impulses with his modern "savoir faire," which are valuable for the creation of new cuvées.
The day before the harvest, grape samples are taken. The berries are tasted and the grape seeds are chewed to determine the ripeness of the grapes and the harvest date, and to select the best plots. The family business retains 40% of its Chardonnay harvest and supplies 60% to large houses such as Laurent-Perrier, Bollinger, Mumm, Perrier-Jouet, and Veuve Clicquot.
Production takes place with malolactic fermentation to reduce the Chardonnay acidity. Michel, a winemaker by passion, and the experienced Nelly Dhondt repeatedly taste wines from different plots. A great moment, always different and always educational! The good soil conditions and the special location bring out the unique taste of the terroir and the special character of the wines.
