Description

Composition: 100% Chardonnay from the parcel called "Brisefer" is produced from a Solera (eternal reserve) initiated in 2013. Aged in oak barrels. 5 g/L added sugar. (limited quantity: 4,413 bottles). Disgorgement Dec 24.

Aromas: A rather elegant, fine, and full-bodied champagne, mineral and straightforward. With a beautiful depth and a very delicate, streamlined length on the palate.

Occasion: Pairs excellently with scallop carpaccio, gambas a la plancha, vegetable jardiniere. Jerome Dehours recommends drinking his champagnes at 10-12° for the best development of aromas.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
