Description

Composition: 72% Pinot Noir from Ay and 28% Chardonnay from Oger. A portion of the wines are aged in wood without malolactic fermentation to preserve freshness and enhance complexity. Sugar content: 4.25 g/l. Aged for 6 years on lees. Disgorgement.

Aromas: A rich and captivating nose, unfolding with aromas of lightly toasted brioche, vanilla, and crème brûlée. With aeration, subtle mint nuances gently complete the bouquet. The attack is generous and creamy, revealing notes of pastry, accompanied by a hint of candied citrus fruits. The long and delicious finish is characterized by a delicate spicy note of white pepper, which is the hallmark of this champagne and the Ay terroir.

Recommendation: A beautiful combination with seafood or with poached or grilled fish, thanks to the very dry character of this extra-brut champagne. Or a dry-fat contrast through the association with fatty poultry like capon. More intense combinations can be found with caviar or very spicy dishes like Indian Tandoori.

This vintage can be stored in a cool cellar for at least 10 years; it will become even rounder and more complex.

Serve chilled, but not too cold, at about 8 to 9°C as an aperitif and at 10 to 12°C with food.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
