Description

Blend: 100% Pinot Noir from the 2009 harvest. Malolactic fermentation, vinification in tanks. Dosage: 6 g/L. With gift box.

Aromas: On the nose, this Blanc de Noirs reveals notes of mirabelle plum, honey, sour cherry, and apple tart. On the palate, the attack is smooth and fresh, with a creamy and integrated effervescence. A ripe, plump, and crisp fruit, supported by a fresh and delicate pomelo acidity. This is complemented by a chalky minerality that lends length to the palate. The finish is characterized by delicate fruitiness and balanced richness.

Recommendation: Pork fillet cooked at low temperature, honey jam, and celeriac purée. Seared foie gras with onion confit.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
