Description

Composition: 50% Pinot Noir, 20% Pinot Meunier and 30% Chardonnay. 8g sugar/L. 5 years old. Deg.

Aromas: The color is golden, clear, and shiny. In the glass, a steady effervescence with fine bubbles. The nose is precise and expressive, rich with orchard scents, from ripe apples to the sweetness of honey. The palate, ample and generous, brings aromas of apple compote and puff pastry. The finish is soft and fruity.

The old 1888 press takes 8 hours (including loading and cleaning) to press 4000 kg of grapes, which is twice as long as a modern press. When the Pinot grapes are pressed, there is a slight maceration of the skins with the juice, hence the special color of this Champagne.

Recommendation: ideal as a festive aperitif accompanied by savory petits fours. It pairs very well with roast chicken or veal with small vegetables.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
