Composition: 100% Pinot Meunier, making it a Blanc de Noirs Champagne. It displays a bright golden color with brownish shimmer and a very fine perlage. 3 g sugar dosage/L.

Aromas: it is a lively, structured Champagne with a beautiful richness that gives way to invigorating aromas of autumn fruits such as pear and apple.

For me, the Extra Brut Carte Noire from Champagne Thevenet-Delouvin is a winter Champagne par excellence! It shimmers in soft bronze colors and initially presents itself as robust with nutty aromas. These aromas are typical when the Champagne has aged on its lees for a long time – this is referred to as "autolysis," which provides a special – even more complex aroma – think of freshly baked bread or brioche. The longer the Champagne stays in the glass, the more floral it develops – think of the scent of linden blossoms. Although it presents itself very powerful on the palate, it remains smooth, shows a fine spiciness, and has a long finish. Delicious with lamb's lettuce with croutons, spinach with egg and truffle, or even with a grilled steak.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
