Blend: 50% Pinot Blanc, 35% Petit Meslier,  15%  Arbane from the 2018 harvest from the Les Jardins (Hortï in Latin means garden) plot in Vauciennes. Vinified in wood for 6 months. 3 g/L. Sugar addition.


Aromas: a champagne with notes of pear and apple on the nose, fruity notes on the palate, evolving more towards quince, accompanied by soft tannins with a very vegetal side and a beautiful length.

Occasion: seared scallops and fennel emulsion with lemon caviar, lamb chops à la plancha.

German: "Pear sorbet, farm apple juice and woody aromas blend in a bouquet with a natural side. Under fine bubbles, the substance is fleshier with notes of quince and slightly grainy pear pulp. The tannins support the bouquet and accompany to a long, taut finish with notes of toasted almonds."

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
