Description

Composition: 60% Chardonnay, 30% Pinot Noir and 10% Meunier from the 2010 harvest. The wine is aged for 1 year in wooden barrels (300 L oak barrels made in Damery). Produced without malolactic fermentation, filtration and fining. Disgorging. 5 g/L added sugar.

Aromas: The robe is golden with an extremely fine perlage. The first nose is open, very aromatic with aromas of stewed fruits, liquorice, honey, dried fruits and butter croissants. Then Bourbon vanilla and melted butter signal the champagne's barrel ageing. After long minutes, nougat, quince paste, a hint of curry and spices appear... It is a very complex and accomplished nose, offering a wide range of aromas. The attack in the mouth is delicate and immediately marked by the wine's density. Then the mouth is broad and fleshy. The acid structure remains in the background, as does the caressing effervescence, which gently tickles the palate. In the retro-olfaction, nougat and melted butter are found. Then a warm sensation develops... The finish is long, warm, oily and slightly chalky.

Recommendation: As an aperitif with a fatty cheese like Comté or Parmesan, with foie gras, and at the table ideal with a poached Bresse pullet in cream sauce and mushrooms, truffle dumplings, sweetbreads, braised veal, Châteaubriand with goose liver sauce...

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
