Description

Composition: 60% Chardonnay, 30% Pinot Noir and 10% Meunier from the 2012 harvest. The wine is aged for 1 year in wooden barrels (300 L oak barrels made in Damery). Produced without malolactic fermentation, filtration, and fining. Disgorgement. 5 g/L sugar added.

Aromas: The initial nose is very open and aromatic. This is one of the characteristics of the Cuvée Jadis style. The expression offers us stewed fruits, liquorice, honey, dried fruits and butter croissants. Then, Bourbon vanilla and melted butter signal the aging of the cuvée in barrels. After several minutes, nougat, quince paste, a hint of curry, and spices appear... It is a very complex and accomplished nose, offering a wide range of aromas (fruit, ripeness, "yeast" aromas, wood). The attack is delicate and immediately marked by the density of the wine. The palate is then broad and fleshy. The acidic structure remains in the background, as does the caressingly gentle effervescence that delicately tickles the palate. In the retro-olfaction, nougat and melted butter are found. The finish is long-lasting (more than 15 seconds of persistence!), acidic and warm, buttery and slightly chalky.

Recommendation: Perfect with delicate, creamy dishes such as a poached Bresse pullet in cream sauce with mushrooms, truffle dumplings, veal sweetbreads, braised veal,...

We offer a carefully curated selection of champagnes from the most renowned houses in the Champagne region. Our portfolio includes classic Brut champagnes, rosé varieties, and special vintages. Each bottle is selected according to strict quality criteria to guarantee you the best taste experience.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
