Description

Composition: 85% Meunier and 15% Pinot Noir - 2021 vintage - 40% to 50% reserve wine 2020. Vinification in barrels for 6 months. 5g/L added sugar. Soil worked by horse.

Aromas: An intensely golden color with delicate copper reflections, very fine bubbles forming a beautiful, creamy and long-lasting cordon. A fine, discreet, and elegant nose that gently unfolds with notes of white and yellow fruits, a hint of dried flowers, and a touch of matcha tea. Generous on the palate from the start, delicious and vinous, the freshness in the mid-palate maintains balance and a certain fullness. Dry and round, yet digestible, the finish is salivating.

Recommendation: As an aperitif with a beautiful platter of Serrano ham and Manchego cheese. With a large Mediterranean Aioli (cod, seafood, and vegetables), with a blue lobster Teppanyaki, grilled sesame, and soy sauce.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
