Description

Composition: Vintage champagne made from 100% Chardonnay grapes from the 2012 harvest. The grapes come from a parcel called "Le Truchat" with a soil of limestone and flint, which gives the wine power and minerality. With malolactic fermentation. 0 g/L added sugar.
Aromas: Delicate golden color, fine and light bubbles. On the nose: fresh, pronounced with aromas of iodized spray, stony marl chalk, licorice, acacia, lemon, almond, clove, quince, pear. On the palate: fresh, mineral with a pulpy and crisp fruitiness, underlined by a taut citrus acidity. The mid-palate is orchestrated by a chalky minerality that gives the palate salinity, fruity resonance, and length. Harmonious, fruity, and iodized finish. The terroir fully expresses itself.
Occasion: This vintage champagne perfectly accompanies a special aperitif, e.g., goat cheese with ash! Perfect with seafood, fish, and sushi.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
