Aromas: 2016 is the winery's 3rd vintage, expressing the best of what the year offered. From now on, there will be a vintage Champagne every year, aiming to leave a "trace" in the history of the house. This Champagne shows aromas of ripe, stewed fruits, mirabelle plum, rather round and soft. With a nice fresh balance on the finish.

Occasion: Mr. Dehours recommends drinking this Champagne at 10-12° and enjoying it in large white wine glasses.

"La croûte de pain, la confiture de mirabelles, la pêche compotée, le nez n'est que rondeur et gourmandise avec une touche de toasté en fond. Un vent de fraîcheur souffle en bouche, porté par des notes de citrons jaune et vert, de pomelo et une petite acidité. Cette tension se prolonge largement dans une finale très persistante aux accents salins salivants qui emmène tout droit dans son sillage."

Eng: "Bread crust, mirabelle plum jam, stewed peach – the nose is all roundness and indulgence with a hint of toasted notes in the background. A breeze of freshness blows on the palate, carried by notes of yellow and green lemons, pomelo and a slight acidity. This tension extends into a very persistent finish with mouth-watering saline accents that leave a lasting impression."

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
