Blend: 40% Pinot Noir, 40% Chardonnay, 20% Pinot Meunier. 20% of the wine was fermented in wood. 4g/L added sugar.

Aromas: Multimis is a champagne with two sides: The first side opens with creamy patisserie notes (meringue, macaron). It expresses its maturation in wood through notes of linseed oil, wax, and dried and candied fruits (apple, pear). Then a second part unfolds: an elegant patina of the wine then takes hold in the mouth, with notes of citrus fruits and orange blossoms, derived from the Chardonnay. A calm energy that seduces lovers of champagne wine.

Recommendation: The ideal companion for aperitifs, cocktails, and fine dishes such as sushi, melon cubes, red tuna skewers, salmon, and white meat with lemon.

My favorite for appetizers is the Multimis Extra Brut - 1er Cru from Champagne Jacquinet-Dumez. Although it only has 4 g of residual sugar (it practically can't get any drier), it appears very charming and spicy. The latter comes from Aline and Oliver Jacquinet aging about 20% in oak barrels. It also gives the champagne a note of honey and linden blossoms. With its dry character, it stimulates the juices in the mouth, whets the appetite, and remains incredibly long and salty in the finish! A great companion to lamb's lettuce with croutons, fried bacon and walnuts or a carpaccio of fish or seafood.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
