Description

Composition: 16% Chardonnay grape (aged in oak barrels), 84% Meunier from the 2022 harvest, with very little (2%) still red Pinot Meunier wine. 1.1 g sugar. Disgorgement: Dec. 24.

Aromas: "Oeil de Perdrix" is the name given to pale pink wines. It is a delicate and fresh rosé Champagne with spicy notes and red fruit aromas (strawberry, sour cherry). The bottle has an antique color (dark brown) which protects the Champagne from ultraviolet radiation. The bottle makes this Champagne even more extraordinary and very elegant.

Occasion: Jérôme Dehours recommends drinking this Champagne at a minimum of 10° and enjoying it in large white wine glasses. It is best suited as an aperitif with, for example, Serrano ham and is a perfect accompaniment to grilled king prawns or sushi.

Comment: "Pas de dosage et un an seulement sur ses lies pour cette cuvée vraiment à peine teintée et qui fleure bon le fruit frais. Le nez évoque des notes de réduction avant de s’ouvrir sur la poire juteuse et la rhubarbe fraîche. La bouche offre une rare énergie et une vibration de jeunesse parfaite. Le vin conjugue une vraie gourmandise fruitée, de la gouleyance et une droiture précise. On apprécie aussi l’absence de dosage sur cette cuvée qui n’en a vraiment pas besoin. Génial."

In German: "Keine Dosage und nur ein Jahr auf der Hefe für diese wirklich kaum getönte Cuvée, die nach frischen Früchten duftet. Die Nase erinnert an Reduktionsnoten, bevor sie sich mit saftiger Birne und frischem Rhabarber öffnet. Der Mund bietet eine seltene Energie und eine perfekte jugendliche Vibration. Der Wein vereint eine echte fruchtige Köstlichkeit, Süffigkeit und eine präzise Geradlinigkeit. Man schätzt auch den Verzicht auf eine Dosage bei dieser Cuvée, die wirklich keine braucht. Genial!"

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
