Description

Composition: 100% Pinot Blanc (Weissburgunder) from the 2018 harvest. 2.8 Gr/L added sugar. Only 527 bottles. Matured in stainless steel tanks, with malolactic fermentation. With gift bag!

Aromas: Bright, flowing color with luminous yellow, lemon-colored reflections. Light effervescence with a hint of fine, lively bubbles. Seductive first nose, reminiscent of a floral bouquet: lily of the valley, verbena, linden blossom. After aeration, creamy texture with notes of lemon, pear, mint with maritime accents. On the palate: supple and smooth, fruity and with a citrus acidity. The finish is a great wave of peppery freshness and a full vibrancy of surprising aromas.

Recommendation: Pan-seared scallops à la plancha with herb butter. Monkfish tartare, Granny Smith apples, lemon, and a drizzle of olive oil.

The Story: This Champagne owes its existence to the old rootstocks planted on the "Clos" since 2007. Thus, right in front of the winery's cellar, on 80 ares, Arbanne, Petit Meslier, and Pinot Blanc grow side by side, white grape varieties that had almost disappeared in Champagne. The combination of these three special white grapes proved to be purely exceptional. This Champagne is surprising and unique; furthermore, the Mont Dorin plot is worked with a draft horse. This fully aligns with the environmentally friendly approach that has been ours for many years, and which will be officially recognized in 2019 with H.V.E. 3 and V.D.C. certifications. This practice thus promotes the development of fauna (e.g., ladybugs) and flora (poppies, borage, cornflowers, daffodils, etc...).

Opening the bottle: To open a "with agraffe" (or traditional) Champagne bottle, the metal clip replacing the classic wire cage must be removed. Use a sommelier's corkscrew (bottle opener) or a spoon: insert the tool under the clip and pry it out, then carefully twist the bottle (not the cork).

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
