Description

Composition: 35% Pinot Noir, 45% Pinot Meunier, 20% Chardonnay. 62% 2022 harvest, 38% reserve wines. 25% vinified in wood. Sugar content: 5 g/L. No malolactic fermentation, no filtration or fining. The wines are aged for at least 24 months.

Aromas: It displays a beautiful golden-pink color with fine and regular bubbles. The lively mousse is perfectly integrated. The texture is velvety and generous. The nose is fruity, first revealing notes of raspberry, pomegranate, and cherry, then vegetal and spicy notes (tarragon, licorice, cinnamon, and gingerbread). The palate is round and balanced, showing both subtle acidity and effervescence.

Recommendation: ideal as an aperitif with cheese puffs, perfect with delicate appetizers such as vol-au-vents, scallops, or veal sweetbreads.

For me, the Reflets Extra Brut from Champagne Caillez-Lemaire is an example of a superb, very characterful and very typical Champagne. It sparkles in straw colors with bronze reflections and captivates with its robust, spicy, and very characterful nature. Think of fresh walnuts, salted almonds, and brioche. On the palate, you feel its pleasant dry character – and the citrus aromatics make it refreshing. Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
