Description

Composition: 35% Pinot Noir, 45% Meunier, 20% Chardonnay from the 2018 harvest and 25% from 2017. 15% aged in oak barrels. Sugar content: 5 g/L. No malolactic fermentation, no filtration or fining.

Aromas: The wine's fruity character (redcurrant, pomegranate, citrus) comes through on the first nose. A few moments later, finer and more subtle notes emerge. They are reminiscent of white flowers, pink grapefruit and bread dough, confirming the visual impression of freshness and generosity. The nose is fresh and dynamic, reflecting the good health of the juices at the time of blending. The attack on the palate is soft and lively, followed by a fruity, fluid and palatable impression. The sensation of roundness is dominant; you're munching on the fruit! The finish is long (7 to 8 seconds of aftertaste) and releases intense fruit aromas (cooked apple, quince purée, strawberry). It ends with a spicy, chalky sensation.

Recommendation: ideal as an aperitif with cheese puffs (gougeres), perfect with fine appetizers such as vol-au-vents, scallops or gravlax.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
