Description

Composition: 70% Pinot Noir, 28% Chardonnay, 2% Pinot Meunier exclusively from the best must (Cuvée). From the 2018 harvest with 27% reserve wines aged in wooden barrels and processed using a Solera method, meaning they are re-blended each year so that the assemblage can be supplemented by more complex wines that nonetheless retain all their minerality. Partial malolactic fermentation. 0 grams sugar content to preserve the character and purity of the wine. Disgorged: Jan 2023.

Aromas: In the glass, the champagne is light gold with fine effervescence and a beautiful fragrance of pale blossoms. This distinctly dry champagne opens on the palate with clear citrus notes. Initially lean, it soon shows itself to be full and round with a long and clear finish of apple and bread.

Recommendation: for a fresh aperitif, e.g., with salmon canapés, perfect with seafood and raw fish. Ideal for refining Japanese cuisine!

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
