Description

This 2017 vintage was produced from grapes from the "Clos des Fourches" plot in Tauxières-Mutry, specially selected for their concentrated aromas and freshness.

Composition: 100% Chardonnay. Aged for 11 months in oak barrels for better harmony of aromas. Sugar content: 2 g/L. Disgorgement: March 2024.

Aromas: The fine, airy side of Chardonnay, while retaining the powerful characteristics and fruitiness of the wines from the southern side of the Montagne de Reims, reminiscent of the great wines of Meursault.

Fr: "Une cuvée tout en finesse, charmeuse et intense. Le nez assez démonstratif nous fait penser à certains chardonnays de la Côte de Nuits : fleurs mellifères, minéralité et notes de fruits pulpeux (pommes et poires) avec des touches acidulées. La bouche est crémeuse et ronde, avec une couche de boisé et de grande gourmandise pâtissière. Avec les beaux amers en finale, l’idéal serait un homard rôti servi avec un émincé de pommes vertes en infusion de verveine."

"A very fine, charming, and intense Champagne. The rather expressive nose reminds us of some Chardonnays from the Côte de Nuits in Burgundy: honeyed flowers, minerality, and notes of pulpy fruits (apples and pears) with tangy touches. The palate is creamy and round, with a layer of oak and a great pastry-like delicacy. With the pleasant bitterness on the finish, roasted lobster served with thinly sliced green apples infused with verbena would be ideal."

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
