Aromas: In the glass, a beautiful golden-yellow robe. On the palate, an aromatic complexity revealing notes of nuts and cocoa, orange marmalade and oak bark with a mineral finish.

Recommendation: Ideal as an aperitif. Wonderful with a piece of cheese such as Comté or sheep's cheese (e.g. Ossau-Iraty), also with Parma or Serrano ham.

"Sur une base de 2007, le premier nez démarre sur le style oxydatif avec de la noix, du cacao, dans un style rancio. C'est très raisins secs et curcuma avec côté boisé intégré du genre écorce du pin. En bouche, on est sur un champagne avec plein de caractère. Bien que l’on retrouve quelques arômes de fruits à coques, la sensation en bouche est bien plus jeune qu’au nez. On a du fruit type figue séchée, un côté makroud et des épices douces qui emmènent assez loin dans la dégustation et titillent les narines avec douceur. La fraîcheur est encore bien présente et la finale patinée est une caresse de velours."

Eng: "Based on the 2007 vintage, the first nose starts with an oxidative style with notes of walnut, cocoa, in a rancio style. It is very raisin and turmeric with an integrated woody side reminiscent of pine bark. On the palate, this is a champagne with a lot of character. Although some nutty aromas can be found, the mouthfeel is significantly younger than on the nose. There are notes of dried figs, a hint of makroud (dates) and soft spices that carry the enjoyment far and gently tickle the nose. The freshness is still very present and the mellow finish is a velvety caress."

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
