Description

Composition: 100% Fromenteau grape variety (Pinot Gris) from the Les Truchots plot, ploughed by Antoine Drappier with horses. Aged for 8 months in 600-litre barrels made of local oak from the Foret d'Orient. Unfiltered. Minimal use of sulphur. 0 g/L added sugar.

Aromas: beautiful golden colour. This Champagne is lively and fragrant with a dense aroma of nutty apples and a hint of melon. These are joined by a slightly lactic note reminiscent of cream cheese, a little stone spice, notes of lichens, pepper and sourdough bread. On the palate, "Trop m'en faut" is spicy, juicy and as individual as on the nose. This individuality is what makes this Champagne special. It is precise and clearly defined, bringing brittle and fresh core fruit notes with a hint of pineapple, earthy and herbal notes, presenting itself fresh and lively, soft in texture, but powerful in acidity.

The little story: Its name "Trop m'en Faut" is a play on the word "Fromenteau". The principle of this wordplay, invented by Rabelais in the 16th century, consists of swapping certain syllables of a sentence to obtain another sentence. This name could also be translated as the archaic "So good that I'll never have too much!"

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
