Description

Composition: 60% Pinot Noir, 40% Chardonnay from the terroirs of Sacy and Les Mesneux, 2016 vintage. Vinified in wood. 4g/L dosage.

Aromas: A champagne with notes of wheat grains, reminiscent of harvest, and scents of hazelnut and chestnut. After aeration, notes of pear, musk, and violet follow in a slightly balsamic universe, reminiscent of the Chardonnay's wood aging. Candied red citrus fruits on the nose add a gourmet touch. The wine's complexity is confirmed on the palate with saline and "patisserie" notes with a hint of bergamot, confirming the presence of red citrus fruits. The wine is generous but maintains a certain restraint.

Recommendation: A champagne that will pair with traditional dishes such as foie gras, pâté, with shallots and grenaille potatoes, veal sweetbreads, refined poultry, ...

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
