Description

Composition: 50% Chardonnay, 25% Pinot Noir and 25% Meunier. 82% vinified in oak barrels. Harvests 2012 to 2014. Sugar content: 5 g/L. No malolactic fermentation, no filtration or fining. 5 years old.

Aromas: This champagne has a beautiful pale gold color and initially exudes aromas of brioche and melted butter with a slightly smoky background. On the nose, it elegantly unfolds with autumnal, spicy, and woody notes.

On the palate, it is persistent and full-bodied. The wine's texture is reminiscent of silk and fully contributes to the pleasure of tasting. The finish is open, long (more than ten seconds of lingering flavor), creamy, and fresh. Finally, a salty note can be perceived.

Recommendation: ideal as an aperitif with cheese puffs, perfect with delicate appetizers such as ravioli.

"For me, the greatest fascination with champagne – and also with wine – is that there is an absolutely perfect one for every occasion! A champagne made for autumn – almost textbook-like – for me is the Eclats Brut from Caillez-Lemaire! It glows in a rich golden hue, and even in its aroma, it appears finely spicy, round, and polished. Its scent is reminiscent of warm toast with melted butter, almonds, and fresh walnuts. Despite its spicy character, it remains very delicate and finely structured. On the palate, it gets a real 'kick' – a fresh fruitiness like apricots makes it juicy and fresh – paired with a delicate caramel aroma. In the finish, walnuts and some raisins remain.

The secret to this smooth, nutty champagne is certainly that Virginie and Laurent van Poperinghe mature most of the base wines in wooden barrels – which requires a very special touch to ensure it still retains its fresh character and fruitiness. In addition, they forgo filtration so that the champagne loses nothing.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
