In the mornings I wake up at 7:15 am, drink a coffee, and drive to the vineyards from home with Geoffrey, my partner, and Uguette, our dog. I live only three minutes away from our vineyards. Dad joins us later, and we usually work as a trio in the vineyard.
When I work in the office, I meet with my mother, who manages all the commercial aspects from the neighboring village.

This morning (07.04.) we pruned our young vines. We have 70 ares of vines that are two and three years old. It is very time-consuming to care for them, but we know they are the future of the estate. We wait as long as possible to prune them to protect them from frost. Since they grow close to the ground, they are very susceptible to spring frost. They are budding, but due to the phenomenon of acrotony*, we remove the sprouted buds and make room for the buds that are still in the cotton and are more resistant. We finished pruning our vines last week, as Les Mesneux (near Reims) is a frost-prone village.
I go home for lunch at noon and take a 1.5-hour break. I eat and then take time to process my emails.

In the afternoon, we also pruned the young vines until 5 p.m.
After that, as planned, we tasted the new bottling with several dosage trials, as we are disgorging on Wednesday, April 9th.
I had prepared samples of the bottling with a dosage range from 0 to 4 g/L (see photo). It is very rare for us to dose the wines more heavily. Each of us tastes blind and then gives our opinion on each wine to select the final dosage. We finished around 6:30 p.m. After that, I went home. As soon as I'm home, I usually take care of reservations for the holiday apartment**, if needed.
How many hours do I usually work per day?
It depends on the season and the day. It can range from 7 hours on demanding vineyard days to 9 hours when I do more office work, paperwork, or we need to bottle, etc.
In the evening, I have dinner around 7:30/8:00 p.m. and go to bed around 10:00 p.m.
Favorite pairing with one of your champagnes?
My favorite is a bottle of Vocabilis with a red tuna tataki with sesame, or a bottle of Sublimum Rosé with a platter of Italian specialties like Parma ham, Parmesan...

Le matin je me réveille à 7h15, je bois un café et je pars aux vignes depuis la maison avec Geoffrey mon conjoint et uguette notre chienne. J’habite à 3 minutes de la plupart de nos vignes. Papa nous rejoint la bas, nous travaillons la plupart du temps tous les 3 pour les travaux manuels.
Quand je fais du bureau, je rejoins ma maman qui gère toute la partie commerciale depuis le village d’à côté.

Ce matin, nous avons taillé nos petits plants, nous avons 70 ares de vignes ayant 2 et 3 ans. Cela prend beaucoup de temps de s’en occuper mais nous savons que c’est l’avenir du vignoble. Nous attendons le plus tard possible pour les tailler afin de les protéger des gelées. Ceux-ci étant au ras du sol, ils sont très sensibles au gel de printemps. Ils sont entrain de debourrer, mais avec le phénomène d’acrotonie nous supprimons les bourgeons debourres et laissons places aux bourgeons encore dans le coton qui serons plus résistants. Nous avons terminé de tailler nos vignes la semaine dernière, car les Mesneux est un village sensible au gel.
Je rentre déjeuner chez moi le midi, je prend 1h30 de pause. Je déjeune puis je prend le temps de traiter mes mails.
L’après midi nous avons également taillé les petits plants jusqu’a 17h ensuite nous avions prévu de déguster le nouveau tirage avec plusieurs essais dosage car nous dégorgeons mercredi. J’avais préparé des échantillons du tirage avec une gamme de dosage allant de 0 à 4 g/L. C’est très rare que nous dosions plus fort les vins. Tout le monde déguste à l’aveugle puis donne son avis sur chaque vin pour choisir le dosage final. Nous avons terminé vers 18h30. Ensuite je suis rentrée chez moi. Une fois rentrée, je m’occupe généralement des réservations du gîte quand il y a besoin.
Combien d'heures de travail par jour en géneral?
Cela dépend de la saison et des journées, cela peut aller de 7h lors des journées de vignes assez fatigantes à 9h quand je fais plus de bureau, papiers, habillage etc
Le soir, je dîne vers 19h30/20h et je me couche vers 22h.
