This exceptional Extra Brut Champagne from the small family winery Néret-Vély is made from pure Chardonnay of the 2022 harvest – vinified in stoneware vessels and without malolactic fermentation, which gives it a special freshness and mineral precision. With a dosage of only 3 g/l, it is one of the driest and purest expressions of Champagne. Limited to just 550 bottles, it is a true collector's item for Champagne lovers.

Pale gold and brilliant in the glass, with very lively, fine bubbles that form a persistent, elegant string of pearls – typical of a high-quality Blanc de Blancs Champagne.

Nose Open and inviting: floral notes open the bouquet, followed by green tea and star anise. With a little air, spring honey, quince, and a fine gingerbread spice unfold.

Palate & Finish Dense, precise, and firmly anchored – this Champagne shows impressive depth, energy, and volume on the palate. Spicy and juicy at the same time, it extends into a long, animating finish that inevitably makes you long for the next sip.

Food pairing Crispy veal rice with morels, Bi Bim Bap (Korea) or Phở (Vietnam) – ideal as a food companion but also as an aperitif. This special Champagne shows how versatile a Champagne can be. Its freshness, minerality, and spice make it an ideal partner for a wide range of cuisines.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
