Description

Blend: 75% Pinot Noir, 10% Meunier, 10% Chardonnay, 5% Pinot Blanc (or Blanc vrai). 25% fermented in wood for approx. 12 months. No filtration. Minimal sulfuring (20 mg/L). 4g sugar/L. Organically farmed vineyards, partly ploughed by horse.

Aromas: This Champagne has a beautiful white-gold color, a very fine and persistent mousse with notes of elderflower and violet. A chalky minerality, rounded off by the fleshiness of the Pinot. A tension on the palate, balanced by a discreet dosage.

Recommendation: Ideal as an aperitif. Perfect with antipasti, salmon en papillote, rosé grilled lamb chops, fresh strawberries.

The Story: Clarevallis comes from the Latin name "Clara vallis" which means "clear valley", the name of the Abbey of Clairvaux, built and founded by Saint Bernard. It is a former primary abbey of the Cistercian order and is located about 55 km east and 10 km south of Troyes, in the Aube. This Champagne comes from grapes grown organically on the hills of Urville, which were already planted in Cistercian times. Clarevallis is the expression of the landscape and the land that man has cultivated since the 12th century.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
