Description

Blend: 50% Pinot Noir, 50% Chardonnay from the 2018 harvest. Vinified and aged for 9 months in small wooden barrels. 0g sugar/L. Disgorged in March 2024.

Aromas: On the nose, the 2018 vintage smells enchantingly delicate of ripe apples, pears, and quinces, with a hint of lemon curd and candied ginger. The autolysis notes are also fine and delicate, reminiscent of almond pastries. Additionally, there are notes of crushed stone and white flowers.

On the palate, the A l'Aube 2018 initially presents with a smooth creaminess and an aroma of crumbly and fresh apples, red berries, and white peach. Notes of almond pastry are also present here. As with many Champagnes from Louise Brison, the acidity initially feels silky and then progressively builds freshness and pressure. This is complemented by the chalky minerality typical of the Côte de Bar. The perlage is very fine, the Champagne has good length and provides instant pleasure.

Recommendation: It is the ideal companion for your aperitifs and dishes, such as a Piccata Milanese with spaghetti pomodoro, risotto with porcini mushrooms, or pearl barley risotto with prawns.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
