Everyone knows the big names in Champagne. Moët & Chandon, Taittinger, or Veuve Clicquot stand for sparkling pleasure worldwide. But the truly exciting discoveries often await beyond the well-known labels – with dedicated winemakers and passionate dealers like Alexandra Hepke, who, with great instinct, selects characterful champagnes off the beaten path.
100% Chardonnay. 30% vinified in oak barrels. 1 Gr/L.

The Extra Brut from Champagne Thierry Bourmault is already exciting – this single-varietal Chardonnay champagne sparkles in a light straw color and impresses with its fresh, lively character. A delicate floral fragrance combined with spicy aromas gives it a lot of character even in its scent. When drinking, one feels its puristically dry and extremely digestible nature. It also tastes delicious with a salad with caramelized goat cheese… A special gag when opening: if you peel off the foil, a picture of the winemaker Thierry together with his son William appears on the inside!

2 ) Le Terroir - Champagne B.Gabriel 
90% Meunier, 10% Chardonnay with 30% reserve wine. 36 months old. 4 Gr/L.

"Le Terroir" Extra Brut from Champagne B. Gabriel also presents itself as wonderfully dry yet very fruit-driven. It shines in a stronger golden yellow and its aroma reminds of oranges, apricots, fresh vineyard peach, and lime blossoms. Notes of white pepper and ripe melon are added. On the palate, its creamy acidity is particularly charming – and it lingers long on the finish. The label is adorned with a golden sun - and indeed, this champagne goes wonderfully with a sunset, but also excellently with a Tarte Flambée, the Alsatian flatbread.

48% Pinot Meunier, 15% Pinot Noir, 37% Chardonnay aged in oak barrels - 7 g/L

The Tradition Brut from Champagne David Coutelas is somewhat rounder and toastier. For this classic Champagne cuvée of Pinot Noir, Meunier, and Chardonnay, the latter was aged in small oak barrels. The champagne shimmers in rich gold with slight bronze reflections, and its aroma reminds of freshly baked wood-fired bread, toasted almonds, and walnuts – underscored by a subtle sweetness. On the palate, it convinces with creamy fruit melt and spicy aromas – also reminiscent of tobacco. Due to its rich, complex nature, it is recommended to serve it in a larger wine glass so that it can unfold its full aroma. As a "finishing touch", I would serve a skewer with fried gambas.

Champagne should be stored in a cool, dark place, ideally at a constant temperature between 7-10°C. The bottles should be stored horizontally to keep the cork moist. Avoid direct sunlight and strong temperature fluctuations. Well-stored champagnes can age and gain complexity over many years.

Champagne should be served in flutes or tulip glasses to best preserve its aroma. Chill the bottle for at least 3 hours in the refrigerator or 20 minutes in an ice bucket to 6-8°C. Open the bottle carefully by removing the wire and slowly twisting out the cork. Serve immediately to enjoy its freshness and effervescence.
